Adobo is a classic Filipino dish made with chicken or pork marinated in soy sauce, vinegar, garlic, and black pepper. This keto version uses coconut aminos instead of soy sauce to keep it low in carbs.

Chicken Adobo

Ingredients


  • Chicken Breast

    0.5 kg

  • Coconut Aminos

    1/2 cup

  • Apple Cider Vinegar

    1/4 cup

  • Water

    1/4 Cup

  • Garlic, minced

    10 cloves

  • Black Peppercorns

    1 teaspoon

  • Bay Leaf

    1

  • Olive Oil or Coconut Oil

    1 tablespoon

Steps


  1. In a large bowl, combine the chicken or pork, coconut aminos, vinegar, water, garlic, peppercorns, and bay leaf. Marinate for at least 30 minutes, or up to overnight.
  2. Heat the olive oil in a large skillet over medium heat. Add the chicken or pork and marinade, and cook until the chicken or pork is cooked through, about 10-15 minutes.
  3. Serve with cauliflower rice or zucchini noodles.
