Creamy Mushroom Soup

Ingredients


  • Onion

    1/2 diced

  • Mushrooms

    1 and 1/2 diced

  • Coconut Oil / Olive Oil

    1/2 tsp

  • Coconut Milk

    1 and 1/2 cup

  • Cauliflower Florets

    2 cup

  • Onion Powder

    1 tsp

  • Salt

    1/4 tsp

  • Pepper

    1/4 tsp

Steps


  1. Add cauliflower, coconut milk, onion powder, pepper, and salt in a saucepan
  2. Cover and bring to boil over medium heat
  3. Reduce heat to low and simmer for 8 minutes.
  4. Using blender puree the soup until smooth.
  5. Heat oil in a saucepan over high heat.
  6. Add onion and mushrooms and sauté for 8 minutes.
  7. Add cauliflower mixture to sautéed mushrooms. Bring to boil.
  8. Cover and simmer for 10 minutes
  9. Serve and enjoy
