Deep Fried Keto Donuts

Ingredients


  • Almond Flour

    2 cups

  • Coconut Flour

    1/4 cup

  • Stevia or Equal Gold (or any preferred sweetener)

    1/4 cup

  • Baking Powder

    2 teaspoons

  • Salt

    1/4 teaspoon

  • Large Eggs

    4 pieces

  • Unsweetened Almond Milk or Coconut Milk

    1/4 cup

  • melted coconut oil

    1/4 cup

  • Vanilla Extract

    1 teaspoon

  • Frying Oil

  • Sweetener (optional for dusting)

Steps


  1. In a mixing bowl, whisk together the almond flour, coconut flour, sweetener, baking powder, and salt until well combined.
  2. In a separate bowl, beat the eggs, almond milk (or coconut milk), melted coconut oil, and vanilla extract together until smooth.
  3. Gradually pour the wet ingredients into the bowl of dry ingredients and mix until a thick batter forms. Ensure that there are no lumps in the batter.
  4. Heat oil in a deep fryer or a deep pot to a temperature of approximately 350°F (175°C).
  5. Carefully drop spoonful of the dough into the hot oil, frying a few donuts at a time. Be cautious as the oil may splatter.
  6. Fry the donuts for about 2-3 minutes on each side, or until they turn golden brown. Flip them once during the cooking process to ensure even browning.
  7. Using a slotted spoon or tongs, remove the fried donuts from the oil and transfer them to a paper towel-lined plate to drain excess oil.
  8. Allow the donuts to cool slightly, then dust them with sweeteners, if desired.
