Easy Keto Chicken Chow Mein

Ingredients


  • Chicken (boneless, skinless, thinly sliced)

    2 breasts

  • Sesame Oil

    2 tablespoons

  • Garlic (minced)

    4 cloves

  • Fresh Ginger (grated)

    1 inch

  • Bell Peppers (sliced, any color)

    1 cup

  • Cabbage (sliced)

    1 cup

  • Mushrooms (sliced)

    1 cup

  • Soy Sauce (or tamari for gluten-free)

    2 tablespoons

  • Oyster Sauce

    1 tablespoon

  • Rice Vinegar

    1 tablespoon

  • Stevia or Equal Gold (or any preferred low-carb sweetener)

    1 teaspoon

  • Salt

  • Pepper

  • Green Onions (sliced, optional for topping)

  • Sesame Seeds (optional for topping)

Steps


  1. Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of sesame oil to the skillet.
  2. Add the sliced chicken to the skillet and cook until it is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  3. In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
  4. Add the sliced bell peppers, cabbage, and mushrooms to the skillet. Stir-fry the vegetables for about 3-4 minutes until they are slightly softened but still crisp.
  5. In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, erythritol (or sweetener of choice), salt, and pepper.
  6. Return the cooked chicken to the skillet and pour the sauce over the chicken and vegetables. Stir everything together and cook for an additional 2-3 minutes to allow the flavors to blend.
  7. Remove from heat and garnish with sliced green onions and sesame seeds, if desired.
