A refreshing and tropical Filipino snack made with the flavors of buko (young coconut) and pandan. This keto-friendly version of the traditional dessert is sugar-free and low in carbs, making it a delightful guilt-free treat.

Keto Buko Pandan Salad

Ingredients


  • Buko (young coconut) Meat, shredded

    2 cups

  • Unsweetened Coconut Cream

    1/4 cup

  • Stevia or Equal Gold

    1/4 cup

  • Pandan Extract

    1/2 teaspoon

  • Green Food Coloring

    1/4 teaspoon

  • Nata de Coco (sugar-free)

    1/4 cup

  • Coconut Gelatin (sugar-free)

    1/4 cup

Steps


  1. In a mixing bowl, combine the shredded buko (young coconut) meat, unsweetened coconut cream, stevia or equal Gold, pandan extract, and green food coloring (if using). Mix well until the ingredients are evenly distributed.
  2. If desired, you can add sugar-free nata de coco (coconut jelly) and sugar-free coconut gelatin to the mixture for added texture. Gently fold them into the mixture.
  3. Once everything is well combined, cover the bowl with plastic wrap and refrigerate for at least 1-2 hours to allow the flavors to meld and the salad to chill.
  4. Serve the Keto Buko Pandan Salad chilled and enjoy!
  5. Note: You can garnish the salad with some toasted unsweetened coconut flakes or a sprig of fresh mint leaves for added visual appeal. Remember to adjust the nutritional information if you choose to add any additional toppings or mix-ins.
