Keto Cajun-Stuffed Chicken

Ingredients


  • Chicken (boneless, skinless)

    4 breasts

  • Cream Cheese

    4 ounces

  • Bell Peppers (diced, any color)

    1/4 cup

  • Cajun Seasoning

    1 teaspoon

  • Garlic Powder

    1/2 teaspoon

  • Onion Powder

    1/2 teaspoon

  • Paprika

    1/2 teaspoon

  • Salt

    1/2 teaspoon

  • Black Pepper

    1/4 teaspoon

  • Olive Oil

    2 tablespoons

Steps


  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the softened cream cheese, diced bell peppers, Cajun seasoning, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to create the Cajun stuffing.
  3. Lay the chicken breasts flat on a cutting board. Use a sharp knife to cut a horizontal slit into the side of each chicken breast, creating a pocket for the stuffing. Be careful not to cut all the way through.
  4. Stuff each chicken breast with an equal amount of the Cajun cream cheese mixture. Secure the opening with toothpicks, if necessary.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Once the oil is hot, add the stuffed chicken breasts to the skillet.
  6. Cook the chicken for about 3-4 minutes on each side until browned.
  7. Transfer the skillet with the chicken to the preheated oven. Bake for approximately 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Once cooked, remove the chicken from the oven and let it rest for a few minutes.
  9. Carefully remove the toothpicks before serving.
