Ingredients
Steps
- Preheat your oven to 375°F (190°C).
- In a bowl, combine the softened cream cheese, diced bell peppers, Cajun seasoning, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to create the Cajun stuffing.
- Lay the chicken breasts flat on a cutting board. Use a sharp knife to cut a horizontal slit into the side of each chicken breast, creating a pocket for the stuffing. Be careful not to cut all the way through.
- Stuff each chicken breast with an equal amount of the Cajun cream cheese mixture. Secure the opening with toothpicks, if necessary.
- Heat olive oil in an oven-safe skillet over medium-high heat. Once the oil is hot, add the stuffed chicken breasts to the skillet.
- Cook the chicken for about 3-4 minutes on each side until browned.
- Transfer the skillet with the chicken to the preheated oven. Bake for approximately 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Once cooked, remove the chicken from the oven and let it rest for a few minutes.
- Carefully remove the toothpicks before serving.
- Serve the Keto Cajun-Stuffed Chicken hot and enjoy!
