Keto Cheesecake Brownies

Ingredients


  • Almond Flour

    1 cup

  • Unsweetened Cocoa Powder

    1/4 cup

  • Baking Powder

    1/4 teaspoon

  • Salt

    1/4 teaspoon

  • Unsalted Butter (melted)

    1/2 cup

  • Stevia or Equal Gold (or any preferred sweetener)

    3/4 cup

  • Large Eggs

    3 pieces

  • Vanilla Extract

    1 and 1/2 teaspoons

  • Cream Cheese (softened)

    8 ounces

Steps


  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a mixing bowl, whisk together the almond flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, mix the melted butter and sweetener until well combined.
  4. Add the eggs and vanilla extract to the butter mixture and whisk until smooth.
  5. Add the dry ingredients to the wet ingredients and stir until a thick brownie batter forms.
  6. Pour the brownie batter into the prepared baking dish, spreading it evenly.
  7. In another bowl, beat the softened cream cheese, sweetener, egg, and vanilla extract until smooth and creamy.
  8. Spoon dollops of the cheesecake mixture on top of the brownie batter.
  9. Use a knife or a skewer to swirl the cheesecake mixture into the brownie batter, creating a marbled effect.
  10. Bake in the preheated oven for approximately 25-30 minutes or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs.
  11. Remove from the oven and let it cool in the baking dish for about 15 minutes, then transfer to a wire rack to cool completely.
