Keto Chia Pudding

Ingredients


  • Chia Seeds

    1/4 cup

  • Unsweetened Almond Milk or Coconut Milk

    1 cup

  • Stevia or Equal Gold (any preferred sweetener)

    1 tablespoon

  • Sliced Fresh Strawberries (or other berries) for topping

Steps


  1. In a bowl, combine the chia seeds, unsweetened almond milk (or coconut milk), sweetener, and vanilla extract. Stir well to ensure the chia seeds are evenly distributed.
  2. Let the mixture sit for a few minutes and then stir again to prevent clumping of the chia seeds. Repeat this process a couple of times within the first 15 minutes.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and form a pudding-like consistency.
  4. Once the chia pudding has chilled and thickened, give it a good stir to break up any clumps. If desired, you can add more almond milk to adjust the consistency to your liking.
  5. Spoon the keto chia pudding into serving bowls or glasses. Top with sliced fresh strawberries or other berries if desired.
