Keto Chocolate Chip Muffins

Ingredients


  • Butter

    8 tablespoons

  • Vanilla Extract

    2 teaspoons

  • Pink Himalayan Salt

    1/2 teaspoon

  • Large Eggs

    4 pieces

  • Almond Flour

    2 cups

  • Baking Powder

    3/4 teaspoon

  • Chocolate Chips

    1 and 1/2 cups

Steps


  1. Preheat the oven to 375°F.
  2. Melt the butter in a large bowl. Add the vanilla, salt, and sweetener then mix. The sweetener should start to dissolve and make a creamed butter consistency.
  3. Now add the almond flour, baking powder, and eggs. Mix again well to break apart any clumps.
  4. Stir in the chocolate chips. Optionally leave out some chocolate chips for topping the muffins before baking.
  5. Fill a silicone muffin pan with the batter distributing it evenly between 12 muffins.
  6. Bake for 30-40 minutes, or until the top is golden and a toothpick comes out clean.
  7. Remove the muffins from the oven and let them cool in the pan for a few minutes. Then transfer them to a wire rack to cool completely.
  8. Once cooled, serve and enjoy your Keto Chocolate Chip Muffins as a delightful Filipino snack!
