Keto Chocolate Ice Cream

Ingredients


  • Heavy Cream

    2 cups

  • Unsweetened Almond Milk

    1 cup

  • Stevia or Equal Gold (or any preferred sweetener)

    3/4 cup

  • Unsweetened Cocoa Powder

    1/2 cup

  • Vanilla Extract

    2 teaspoons

  • Salt

    1/4 teaspoon

  • Sugar-free Chocolate Chips (optional for topping)

  • Crushed Nuts (optional for topping)

Steps


  1. In a saucepan, combine the heavy cream and almond milk over medium heat. Heat the mixture until it starts to simmer, but do not let it boil.
  2. In a separate bowl, whisk together the powdered erythritol (or your preferred sweetener), cocoa powder, and salt.
  3. Slowly pour the dry ingredient mixture into the saucepan while whisking continuously. Continue whisking until the mixture is well combined and smooth.
  4. Remove the saucepan from the heat and stir in the vanilla extract. Let the mixture cool for a few minutes.
  5. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. This usually takes about 20-30 minutes.
  6. Once the ice cream has reached a soft-serve consistency, transfer it to a lidded container and freeze for at least 4 hours or until firm.
