- In a saucepan, combine the heavy cream, unsweetened cocoa powder, and powdered erythritol. Place the saucepan over medium heat and whisk until the mixture is well combined and slightly heated. Do not bring it to a boil.
- In a separate bowl, sprinkle the gelatin powder over the cold water and let it sit for a few minutes to bloom.
- Add the bloomed gelatin mixture to the saucepan and continue whisking until the gelatin is completely dissolved and the mixture is smooth. This should take about 2-3 minutes.
- Remove the saucepan from the heat and stir in the vanilla extract.
- Divide the mixture evenly among four dessert glasses or ramekins. Let them cool to room temperature.
- Once cooled, cover each glass or ramekin with plastic wrap and refrigerate for at least 3 hours or until the panna cotta is set.
