Keto Cinnamon Rolls

  • Almond Flour

    2 cups

  • Coconut Flour

    1/4 cup

  • Stevia or Equal Gold (or any preferred sweetener)

    1/2 cup

  • Baking Powder

    2 teaspoons

  • Salt

    1/4 teaspoon

  • Unsalted Butter (melted)

    1/4 cup

  • Large Eggs

    2 pieces

  • Vanilla Extract

    1 and 1/2 teaspoons

  • Unsweetened Almond Milk or Coconut Milk

    1/4 cup

  • Ground Cinnamon

    2 tablespoons

  • Unsalted Butter (softened)

    2 tablespoons

  • Cream Cheese (softened)

    4 ounces

  • Heavy Cream

    1 tablespoon

Steps


  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a mixing bowl, whisk together the almond flour, coconut flour, sweetener, baking powder, and salt.
  3. Add the melted butter, eggs, vanilla extract, and unsweetened almond milk (or coconut milk) to the dry ingredients. Mix until a dough forms.
  4. Place the dough between two sheets of parchment paper and roll it out into a rectangular shape, approximately 1/4 inch thick.
  5. In a small bowl, mix together the sweetener and ground cinnamon for the filling.
  6. Spread the softened butter evenly over the rolled-out dough, leaving a small border around the edges. Sprinkle the cinnamon-sweetener mixture over the butter.
  7. Starting from one long edge, tightly roll the dough into a log shape.
  8. Use a sharp knife to cut the log into approximately 8 equal-sized cinnamon rolls.
  9. Place the cinnamon rolls in the prepared baking dish, spacing them evenly.
  10. Bake in the preheated oven for approximately 25-30 minutes or until golden brown and cooked through.
  11. While the cinnamon rolls are baking, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese, powdered erythritol (or your preferred sweetener), heavy cream, and vanilla extract until smooth and creamy.
  12. Once the cinnamon rolls are done, remove them from the oven and let them cool for a few minutes. Drizzle the cream cheese frosting over the warm rolls.
