- Add the melted butter, eggs, vanilla extract, and unsweetened almond milk (or coconut milk) to the dry ingredients. Mix until a dough forms.
- Place the dough between two sheets of parchment paper and roll it out into a rectangular shape, approximately 1/4 inch thick.
- In a small bowl, mix together the sweetener and ground cinnamon for the filling.
- Spread the softened butter evenly over the rolled-out dough, leaving a small border around the edges. Sprinkle the cinnamon-sweetener mixture over the butter.
- Starting from one long edge, tightly roll the dough into a log shape.
- Use a sharp knife to cut the log into approximately 8 equal-sized cinnamon rolls.
