Keto Egg-White Scramble with Sausage

Ingredients


  • Egg Whites

    4 pieces

  • Chicken or Turkey Sausages (sliced)

  • Onions (chopped)

    1/4 cup

  • Bell Peppers (chopped)

    1/4 cup

  • Tomatoes (chopped)

    1/4 cup

  • Olive Oil

    1 tablespoon

  • Salt

  • Pepper

  • Fresh Parsley or Chives (optional for garnish)

Steps


  1. Heat the olive oil in a non-stick skillet over medium heat.
  2. Add the sliced sausages to the skillet and cook until browned and cooked through, about 3-4 minutes. Remove the sausages from the skillet and set aside.
  3. In the same skillet, add the chopped onions, bell peppers, and tomatoes. Sauté until the vegetables are tender, about 3-4 minutes.
  4. In a separate bowl, whisk the egg whites until frothy. Season with salt and pepper.
  5. Push the vegetables to one side of the skillet and pour the whisked egg whites into the other side. Allow the egg whites to cook for a few seconds until they start to set around the edges.
