Ingredients


  • Eggplant (cubed)

  • Fresh Spinach Leaves

    2 cups

  • Cherry Tomatoes (halved)

    1/4 cup

  • Red Onion (thinly sliced)

    1/4 cup

  • Olive Oil

    2 tablespoons

  • Balsamic Vinegar

    1 tablespoon

  • Garlic (minced)

    1 clove

  • Salt and Pepper
