- In a large paella pan or skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the minced garlic and diced onion to the pan and sauté until fragrant and translucent.
- Stir in the diced red and green bell peppers and cook for another 3-4 minutes until they begin to soften.
- Push the vegetables to one side of the pan and add the remaining 2 tablespoons of olive oil to the other side.
- Add the shrimp, mussels, squid, and fish chunks to the pan. Sauté the seafood for 2-3 minutes until partially cooked.
- Stir in the cauliflower rice, chicken broth, smoked paprika, and saffron threads (if using). Season with salt and pepper to taste.
- Reduce the heat to low, cover the pan, and let the paella simmer for 10-15 minutes until the seafood is fully cooked and the flavors are well combined.
- Once cooked, remove the paella from heat and let it rest for a few minutes.
- Garnish with freshly chopped parsley and serve hot.
