Keto Filipino Seafood Paella

Ingredients


  • Shrimp, peeled and deveined

    1/2 kilo

  • Mussels

    1/2 kilo

  • Squid, sliced into rings

    1/2 kilo

  • Fish Fillet (Snapper, Lapu lapu)

    1/4 kilo

  • Olive or Coconut Oil

    4 tablespoon

  • Garlic, micned

    4 cloves

  • Onion, diced

  • Red Bell Pepper, diced

    1

  • Green Bell Pepper, diced

  • Cauliflower Rice

    1 cup

  • Chicken Broth (or water)

    0.5 cup

  • Smoked Paprika (Powder)

    1 tablespoon

  • Salt

Steps


  1. In a large paella pan or skillet, heat 2 tablespoons of olive oil over medium heat.
  2. Add the minced garlic and diced onion to the pan and sauté until fragrant and translucent.
  3. Stir in the diced red and green bell peppers and cook for another 3-4 minutes until they begin to soften.
  4. Push the vegetables to one side of the pan and add the remaining 2 tablespoons of olive oil to the other side.
  5. Add the shrimp, mussels, squid, and fish chunks to the pan. Sauté the seafood for 2-3 minutes until partially cooked.
  6. Stir in the cauliflower rice, chicken broth, smoked paprika, and saffron threads (if using). Season with salt and pepper to taste.
  7. Reduce the heat to low, cover the pan, and let the paella simmer for 10-15 minutes until the seafood is fully cooked and the flavors are well combined.
  8. Once cooked, remove the paella from heat and let it rest for a few minutes.
  9. Garnish with freshly chopped parsley and serve hot.
