Keto Garlicky Greek Chicken

Ingredients

  • Chicken (boneless, skinless)

    4 thighs

  • Garlic (minced)

    4 cloves

  • Juice

    1 Lemon

  • Olive Oil

    2 tablespoons

  • Dried Oregano

    1/2 teaspoon

  • Dried Basil

    1/2 teaspoon

  • Dried Thyme

    1/2 teaspoon

  • Salt

    1/2 teaspoon

  • Black Pepper

    1/4 teaspoon

  • Fresh Parsley (optional for garnish)

  • Lemon Wedges (optional for serving)

Steps

  1. In a bowl, combine the minced garlic, lemon juice, olive oil, dried oregano, dried basil, dried thyme, salt, and black pepper. Mix well to create the marinade.
  2. Place the chicken thighs in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken, ensuring each piece is well coated. Marinate in the refrigerator for at least 1 hour, or preferably overnight for the best flavor.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Remove the chicken thighs from the marinade, allowing any excess marinade to drip off.
  5. Place the chicken on the grill or grill pan and cook for about 6-8 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  6. Once cooked, remove the chicken from the grill and let it rest for a few minutes.
  7. Garnish with fresh parsley, if desired, and serve with lemon wedges for an extra burst of flavor.
  8. Enjoy your Keto Garlicky Greek Chicken while it's hot!
