A delightful keto-friendly version of the classic Filipino snack, Lemon Squares. These tangy and refreshing treats feature a rich lemony flavor and a buttery crust, all while being low in carbs and sugar.

Keto Lemon Squares

Ingredients


  • Almond Flour

    1 and 1/2 cups

  • Stevia or Equal Gold (or any preferred sweetener)

    3/4 cup

  • Salt

    1/4 teaspoon

  • Unsalted Butter (melted)

    1/4 cup

  • Fresh Lemon Juice

    3/4 cup cup

  • Lemon Zest

    1 tablespoon

  • Large Eggs

    4 pieces

  • Heavy Cream

    1/4 cup

  • Coconut Flour

    2 tablespoons

Steps


  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine the almond flour, sweetener, salt, and melted butter. Stir until the mixture resembles coarse crumbs.
  3. Transfer the crust mixture to the prepared baking dish and press it down firmly to create an even layer.
  4. Bake the crust in the preheated oven for approximately 12-15 minutes or until it turns golden brown. Remove from the oven and set aside to cool.
  5. In a separate bowl, whisk together the lemon juice, lemon zest, sweetener, eggs, heavy cream, and coconut flour until well combined and smooth.
  6. Pour the lemon filling mixture over the cooled crust and spread it evenly.
  7. Return the baking dish to the oven and bake for another 15-20 minutes, or until the lemon filling is set.
  8. Once baked, remove the lemon squares from the oven and let them cool completely in the baking dish.
  9. Once cooled, cut the lemon squares into individual servings. Optionally, dust the tops with powdered erythritol for a finishing touch.
  10. Serve and enjoy your Keto Lemon Squares.
  11. Note: The lemon squares are best enjoyed chilled. Store any leftovers in an airtight container in the refrigerator.
