Keto Palitaw

Ingredients

  • Coconut Flour

    1 cup

  • Almound Flou

    1/2 cup

  • Keto Sweetener (Equal Gold)

    1/4 cup

  • Salt

    1/4 teaspoon

  • Hot Water

    3/4 cup

  • Grated Coconut (unsweetened)

    1/4 cup

  • Sesame Seeds (optional toppings)

    1 to 2 tablespoon

Steps

  1. In a mixing bowl, combine the coconut flour, almond flour, erythritol, and salt. Mix well.
  2. Gradually add the hot water to the dry ingredients, mixing as you pour, until a sticky dough forms. Allow the dough to rest for a few minutes
  3. Divide the dough into 12 equal portions and roll each portion into a ball
  4. Flatten each ball slightly to form a disc shape, about 1/4 inch thick
  5. In a pot, bring water to a boil. Gently drop the flattened dough discs into the boiling water, one or two at a time, and cook until they float to the surface. This should take about 1-2 minutes
  6. Use a slotted spoon to transfer the cooked Palitaw to a plate lined with paper towels to drain excess water
  7. Roll each Palitaw piece in grated coconut until fully coated. You can also sprinkle sesame seeds or powdered erythritol on top for added flavor and decoration
  8. Serve the Keto Palitaw immediately and enjoy as a delightful Filipino-inspired low-carb snack!
