Keto Peanut Butter Fudge

Ingredients


  • Natural Peanut Butter (unsweetened)

    1 cup

  • Coconut Oil

    1/2 cup

  • Stevia or Equal Gold (or any preferred sweetener)

    1/4 cup

  • Vanilla Extract

    1 teaspoon

  • Salt

    1 pinch

Steps


  1. In a microwave-safe bowl or on the stovetop, melt the coconut oil and peanut butter together until smooth and well combined.
  2. Stir in the sweetener, vanilla extract, and a pinch of salt. Mix until everything is fully incorporated and the sweetener has dissolved.
  3. Line a small baking dish or container with parchment paper.
  4. Pour the peanut butter mixture into the lined dish, spreading it out evenly.
  5. Place the dish in the refrigerator and chill for at least 2 hours, or until the fudge is firm.
  6. Once chilled and firm, remove the fudge from the dish by lifting the edges of the parchment paper.
  7. Cut the fudge into small squares or desired shapes.
