Ingredients


  • Pork (boneless)

    4 chops

  • Mushrooms (sliced)

    8 ounces

  • Butter (divided)

    4 tablespoons

  • Garlic (minced)

    2 cloves

  • Dried Thyme

    1 teaspoon

  • Salt

  • Pepper

  • Cauliflower (cut into florets)

    1 medium head

  • Cream Cheese

    2 tablespoons

Steps


  1. Preheat your oven to 400°F (200°C).
  2. Season the pork chops with salt, pepper, and dried thyme on both sides.
  3. In a large skillet, melt 2 tablespoons of butter over medium-high heat.
  4. Add the pork chops to the skillet and sear them for 2-3 minutes on each side until they develop a golden brown crust.
  5. Transfer the skillet with the pork chops to the preheated oven and bake for about 12-15 minutes, or until the internal temperature reaches 145°F (63°C).
  6. While the pork chops are cooking, prepare the cauliflower mash. Steam or boil the cauliflower florets until they are fork-tender, about 10-12 minutes.
  7. Drain the cauliflower and transfer it to a food processor or blender.
  8. Add the cream cheese, heavy cream, salt, and pepper to the processor with the cauliflower.
  9. Blend the ingredients until you achieve a smooth and creamy consistency. Adjust the seasoning to taste.
  10. In a separate skillet, melt the remaining 2 tablespoons of butter over medium heat.
  11. Add the minced garlic and sliced mushrooms to the skillet and sauté for 5-7 minutes until the mushrooms are cooked and slightly golden.
  12. Serve the cooked pork chops with the sautéed mushrooms and a side of cauliflower mash.
