Ingredients


  • Large Eggs

    6 pieces

  • Red Bell Pepper (diced)

    1 piece

  • Scallions (chopped)

    2 tablespoons

  • Onion (diced)

    1/4 cup

  • Tomatoes (diced)

    1/4 cup

  • Fresh Cilantro (chopped)

    2 tablespoons

  • Garlic Powder

    1/4 teaspoon

  • Onion Powder

    1/4 teaspoon

  • Paprika

    1/4 teaspoon

  • Salt

  • Pepper

  • Cooking Spray (for greasing the muffin tin)

Steps


  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or oil.
  2. In a mixing bowl, whisk the eggs until well beaten.
  3. Add the diced red bell pepper, onion, tomatoes, scallions, cilantro, garlic powder, onion powder, paprika, salt, and pepper to the bowl. Mix well to combine all the ingredients.
  4. Pour the egg mixture evenly into the greased muffin tin, filling each cup about 3/4 full.
