- In a bowl, combine the chopped spinach, shredded mozzarella cheese, grated Parmesan cheese, minced garlic, dried basil, dried oregano, salt, and black pepper. Mix well to create the spinach filling.
- Lay the chicken breasts flat on a cutting board. Use a sharp knife to cut a horizontal slit into the side of each chicken breast, creating a pocket for the filling. Be careful not to cut all the way through.
- Stuff each chicken breast with an equal amount of the spinach filling, pressing it gently into the pocket. Secure the opening with toothpicks, if necessary.
- Heat olive oil in an oven-safe skillet over medium-high heat. Once the oil is hot, add the stuffed chicken breasts to the skillet.
- Cook the chicken for about 3-4 minutes on each side until browned.
