Keto Stuffed Bell Pepper

  • Small Onion (diced)

  1. Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it with cooking spray.
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Rinse the peppers under cold water and set them aside.
  3. In a large skillet, cook the ground meat over medium heat until browned and cooked through. Remove the cooked meat from the skillet and set it aside.
  4. In the same skillet, add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
  5. Add the cauliflower rice to the skillet and cook for a few minutes until it becomes tender.
  6. Return the cooked meat to the skillet and mix it with the onion, garlic, and cauliflower rice. Stir in the tomato paste, dried herbs, salt, and pepper. Cook for another minute to allow the flavors to meld together.
  7. Spoon the meat and vegetable mixture into each bell pepper, filling them to the top. Place the stuffed peppers in the prepared baking dish.
