A keto version of the traditional Filipino snack, Tikoy. This keto-friendly tikoy is made without glutinous rice, using low-carb ingredients to achieve a similar taste and texture.

Keto Tikoy

Ingredients


  • Coconut Flour

    2 tablespoons

  • Psyllium Husk

    2 and a half tablespoons

  • Coconut Cream

    50 milliliters

  • Water

    100 milliters

  • Sweetener

    1 tablespoon

  • Sesame Seeds

  • Unsweetened Peanut Butter

    1 tablespoon

Steps


  1. Toast 2 tbsp of sesame seeds in a pan until it turns golden brown.
  2. In a bowl sift 2 tbsp coconut flour, add 2 1/2 tbsp psyllium husk, 1 tbsp sweetener, 50ml coconut cream, 100ml water then blend well.
  3. Transfer mixture into heat resistant container spread and steam for 30 minutes.
  4. Loosen and transfer it to parchment paper to flatten tikoy.
  5. Spread unsweetened peanut butter and roll.
  6. Cut into 4 pcs and garnish with roasted sesame seeds and sweetener.
  7. Serve the Keto Tikoy at room temperature or chilled.
