Perfect Breakfast Waffles

Ingredients

  • Almond Flour

    1 cup

  • Coconut Flour

    ¼ cup

  • Erythritol or your preferred Keto-Friendly Sweetener

    2 tablespoons

  • Baking Powder

    1 teaspoon

  • Cinnamon (optional)

    ½ teaspoon

  • Eggs (Large)

    4

  • Unsweetened Almond Milk or any Low-Carb Milk alternative

    ½ cup

  • Melted Butter or Coconut Oil

    2 tablespoons

  • Vanilla Extract

    1 teaspoon

Steps

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, and cinnamon (if using). Mix well to combine.
  3. In a separate bowl, whisk together the eggs, almond milk, melted butter (or coconut oil), and vanilla extract.
  4. Pour the wet ingredients into the bowl with the dry ingredients. Stir until a thick batter forms. Let the batter sit for a few minutes to allow the coconut flour to absorb the liquid.
  5. Lightly grease the preheated waffle iron with cooking spray or a small amount of melted butter or coconut oil.
  6. Spoon the batter onto the waffle iron, using about ¼ to ⅓ cup of batter for each waffle. Spread the batter evenly using the back of a spoon.
  7. Close the waffle iron and cook for about 4-6 minutes, or until the waffles are golden brown and crisp.
  8. Carefully remove the waffles from the iron and transfer them to a wire rack to cool slightly.
  9. Repeat the process with the remaining batter until all the waffles are cooked.
  10. Serve the Keto Breakfast Waffles warm with your favorite keto-friendly toppings, such as sugar-free syrup, fresh berries, whipped cream, or a dollop of nut butter.
