  1. In a bowl, whisk the eggs until well beaten. Set aside.
  2. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  3. Add the diced bell peppers and onion to the skillet. Sauté for about 5 minutes, or until the vegetables are tender.
  4. Transfer the sautéed vegetables to a plate and set aside.
