- Heat olive oil in a large skillet or wok over medium-high heat.
- Add minced garlic and grated ginger to the skillet and sauté for 1 minute until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the broccoli florets and sliced red bell pepper. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
- In a small bowl, whisk together coconut aminus, sesame oil, and red pepper flakes (if using).
- Return the cooked shrimp to the skillet and pour the sauce over the shrimp and vegetables. Toss everything together to coat evenly.
- Cook for an additional 2 minutes, stirring constantly, until the sauce thickens slightly and coats the shrimp and vegetables.
- Season with salt and pepper to taste.
- Remove from heat and garnish with fresh cilantro or green onions.
